Abstract

We aimed to develop a food safety culture assessment tool. Based on the GFSI's Five Dimensions of Food Safety Culture, we made a Food Safety Culture Self-Evaluation Chart that evaluates 30 questions on a scale of one to five and conducted a survey of quality control personnel at food manufacturing facilities. We found while the chart helped grasping the present state of the organization, the necessity of the improvement was clarified by the concrete action, event to be evaluated, evaluation measurement by the hierarchy, etc. The finding suggests that it could be a tool fostering a food safety culture.
